The alpine pastures of the Mont-Dessous and the Mont-Dessus are the home to a herd of goats, three Hintervald cows and a variety of medicinal and aromatic herbs.

From mid-April to the end of September, goat’s milk from the herd is made into three different kinds of organic cheese: fresh cheese with herbs, a 3-week aged cheese and a semi-hard cheese.

Mostly sold in the shops in the Pays-d’Enhaut region and in neighboring Saanenland, the amount of cheese produced remains modest due to the production on a single alpine farm called the Tchivra.
